This chicken breast
recipe grills chicken
that has been marinated with lemon or lime
juice, garlic, oregano, and chili powder.
• 4 boneless chicken breast halves
• 1 cup purchased salsa
• 2 tablespoons vegetable oil
• 1 tablespoon lime or lemon juice
• 2 cloves garlic, finely minced
• 1/2 teaspoon dried leaf oregano, crumbled
• 1/4 teaspoon salt
• 1/4 teaspoon chili powder
Flatten your chicken breasts by placing them
between sheets of plastic wrap or in a large
zip lock bag and pound with flat side of
meat mallet until about 1/4-inch thick.
Then cut the chicken breast into 1-inch strips.
Put the chicken strips in a shallow glass
baking dish and pour the rest of the
ingredients over the chicken. Marinade for
at least 2 hours.
Put the chicken onto metal skewers or
well-soaked wooden skewers.
Grill over high
heat for 6 to 8 minutes, turning a few times
and basting with remaining marinade.
Don't over cook them because they will lose all of the flavor that they soaked up during the marinating. Check back with later for more chicken breast recipes.
